One of Hérault’s best-known culinary specialties is the tielle sétoise. On the edges of this tart, a typical welded shape, and inside a mixture of octopus, onions, peppers and white wine, to be enjoyed all year round! The dough is bread dough.
Escoubille stew is a typical dish of the Hérault valley. This delicious stew is made by mixing leftover meat and vegetables with a few olives.
For a sweet touch, try the famous berlingots de Pézenas, handmade with natural colorants. Pézenas is also home to another well-known specialty: pâtés de Pézenas.
The Languedoc is best known for its great, ripe, intense red wines (Corbières, Saint-Chinian, Faugères), but it also offers Picpoul-based white wines and sparkling wines from the Limoux terroir.
With 23 different AOCs (Aude, Limoux, Muscat, Corbières, etc.), Languedoc wines are not alike.
These grape varieties have one thing in common: their sunny notes and garrigue aromas. Cabernet-Sauvignon, Muscat, Clairette, Picpoul, Carignan and Grenache are the most famous Languedoc grape varieties. Others include Mourvèdre, Cinsault, Bourboulenc and Syrah. And let’s not forget the white aperitif made with Muscat from the town of Frontignan!

Where can you taste regional products from the Hérault?
You can sample all the culinary specialties of the Hérault and the fine wines of the Languedoc (in moderation, of course) in the many restaurants along the Mediterranean coast or in the Languedoc hinterland. In Marseillan, Vias or just about anywhere along the coast, you can taste and buy shellfish, clams, brasucade de moules (cooked over a wood fire) or braised oysters right where they are produced.

The Dry Martini, famous as James Bond’s cocktail.
Don’t forget your sweets: for a taste of berlingots, head for Pézenas. You’ll be able to watch the berlingots being made by hand, a visit you and your family should plan for everyone’s enjoyment.
